It was 1972, the year that marked the beginning of
Mom 'n' Pop's Sugar Cured Country Ham. Mom and Pop Digh started a
small curing facility to supply their own country cooking restaurants. At
that time, they cured and processed about 500 hams per week.

Why have we won so many national awards as one of the best Country Hams
in the country? As one judge put it "Everyone knows, especially Pop,
the secret has to be MOM'S sugar." In our curing process, we have a
special mix that includes white and brown sugar that is rubbed on all our
hams.

Well, as the story goes it did not take long for the word to get out.
Other restaurant owners began inquiring on how they could purchase the Old
Fashioned Sugar Cured Country Ham. Over the years, the facility has been
expanded five times to meet the demand from retail and foodservice
customers. Today, we now process and cure up to 10,000 hams per week
making us one of the top three country ham producers.
